5 hrs. in brine. few hours to air dry. 5 or 6 hrs. to smoke. this is why we do the smoking on the weekend. smoking fish and drinking seem to go hand in hand. besides that, the freaking rains are back.

I hear ya. Ain't nothing better than when it gets cold than to get some oysters or clams and cook them over the fire, Tabasco sauce, crackers, Oysters and cold beer........ Stand around tellin lies, drinkin and eating oysters all night and keepin the fire stoked...... Gotta Love it.....
Sure would like to try out some of that Smoked Salmon though....
